Attean Blueberry Pie Recipe:
For the crust - Mix 2 1/2 cups of flour and 11/4 tsp of salt in a large bowl. Using two forks cut 6 tbsp of butter and 3/4 cups of shortening into the mixture. Slowly drizzle in 1/2 cup of iced water and stir with a rubber spatula. Transfer to a floured work surface and form into a ball and divide in half. Refrigerate for two hours.
**Preheat oven to 400 degrees F
For the Filling - Stir 6 cups of blueberries (Maine blueberries if you have them of course!), 2/3 cup of granulated sugar, 1/4 cup cornstarch, 1/4 teaspoon cinnamon, and 1 tbsp of lemon juice in large bowl.
Roll out the chilled pie dough and carefully place into a 9x2 inch pie dish. Spoon the filling into the crust. Dot the top of the filling with pieces of butter. Top with the remaining dough. Make sure to cut slits in the top to form steam vents. Crimp the edges. Place into the oven and bake for 1 hour.
